Kingfish Molho Recipe

Kingfish molho is a sweet, spicy and tangy fish pickle. It is very similar to Prawn balchao.

Blending the ground paste with vinegar helps in preserving the pickle for a long period of time without refrigerating.

Kingfish molho or mole is made from fresh fish. It is sweet, spicy and tangy and is prepared ahead of the monsoon season

Ingredients
  

For Marination:

  • 6 Pieces King Fish
  • 1/2 tsp Turmeric Powder
  • Salt according to taste

For Frying Fish:

  • 1/4 Cup Cooking Oil

For Ground Masala Paste:

  • 200 ml Malt Vinegar
  • 10 Nos Dried Red Bedki Chillies
  • 10 Nos Dried Kashmiri Chillies
  • 8 Pods Garlic cloves
  • 1 Inch Ginger Piece
  • 1/2 tsp Cloves
  • 1 Inch Cinnamon Stick
  • 1/2 tsp Turmeric Powder
  • 1 tsp Cumin SeedsSalt – 2 Pinches
  • 1/2 tsp Peppercorns

For Sauce:

  • 1 Cup Cooking Oil
  • 1 tsp Finely Chopped Garlic
  • 1 tsp Finely Chopped Ginger
  • 10 Nos Curry Leaves
  • 1/3 Cup Sugar
  • 3/4 Cup Malt Vinegar
  • 1/2 tsp Salt

Instructions
 

  • Marinate the fish with turmeric powder and salt and leave it aside for 1 hour, so the water is drained off completely.

  • Shallow fry the fish on both the sides until brown and crispy.

  • Make small pieces of each big piece and dry them under the sun for a day to get rid of any water content remaining in the fish.

  • Soak dry red chillies in vinegar for an hour before grinding.

  • Now transfer all the ingredients in the grinder and make it into a fine paste. (Check out the ingredients above)

  • Heat cooking oil in a wok, add finely chopped garlic and ginger and also curry leaves and saute until slightly brown.

  • Add the ground masala paste and cook until the masala losses it's raw flavour.

  • Add Sugar and salt and mix.

  • Once the sauce starts to bubble, add the fried fish, mix well so the fish is nicely coated with the sauce.

  • Cook for about 5 minutes on a medium heat and then take off the flame.

  • Kingfish Molho is ready, Store and enjoy for a long time to come.

Notes

Notes:
  • Fry the fish until crispy, if you don’t want to dry the fish after frying.
  • The leftover oil after frying the fish can be used while preparing the sauce. 
  • Ground paste should be only prepared using vinegar, no water should be added whatsoever.
