Homemade Toddy with Coconut Water.

Toddy or Palm wine also known as Surr in Goa is an alcoholic beverage made from the sap of various species of palms such as date palms, coconut palms and the palmyra. This can be used in making fluffy and soft Sannas , Idlis, Uppams and Dosas.

Equipment

  • Mixing bowl
  • Glass Jar
  • Strainer

Ingredients
  

  • 700 ml Coconut water
  • 1/4 Cup Luke warm water (60 ml)
  • 3 Tsp Sugar
  • 1/2 Tsp Dry Yeast

Instructions
 

  • Take luke warm water in a container, add sugar to it and mix until sugar dissolves.

  • Add dry yeast, mix and set it aside for 15 minutes.

  • Take coconut water in another glass jar or a narrow top opening container.
  • Then pour the dry yeast mixture into the coconut water.

  • Mix well
  • Cover the opening of the jar with a muslin cloth, tie and seal it with a thread or rubber band and keep it aside for 24 hours.
    Cover and store the toddy
  • The next day, strain the coconut water mixture.
  • Homemade toddy is ready. Consume within 2 days.

Notes

  • For best results use fresh coconut water.
